Yummy

Jamie's current favourite book is titled 'Yummy, Yucky'. Spaghetti is yummy, worms are yucky. You get the idea. This cookie was yummy. At least all around the edge of it was- her stomach wasn't able to keep up with those big eyes. Similarly, Mommy and Auntie Sam weren't able to keep up with Auntie Nel shopping in St. Jacobs, and so made a mad dash for the safety of the bakery. A big thank you to the Aunts for spoiling Jamie rotten during the visit last week.

nat's eggplant burgers

3 tbsp olive oil, 3 cloves garlic, 4 cups cubed eggplant (with peel on - choose light, firm eggplant - seeds should not be visible on inside when first cut), 1 tbsp h2o, 1/2 cup parmesan, 1 cup fresh parsley (chopped), 2 eggs, 3/4 cup bread crumbs

heat oven to 350, grease a burger-appropriate baking sheet

in a BIG fry pan, heat oil and sautee garlic, throw in eggplant and h2o, reduce to low, cover and let steam until eggplant is soft (about 20 min) - let cool slightly

mix cheese, parsley, eggs and breadcrumbs with eggplant (in a bowl), keep adding breadcrumbs until patties can be formed

place on baking sheet, cook for 30min

nat and darcy's eggplant lasagna (not lasagna, not moussaka, probably not healthy...)

1 large eggplant sliced thinly lengthwise (makes "noodles"), bacon, chunky meat sauce, feta, ricotta, mozarella (grated)

salt eggplant slices and let "sweat" about 15min - do for both sides

rinse eggplant, and put on microwave safe plate, microwave about 7min until soft and noodle-y

grill bacon - not quite until crispy

layer sauce on bottom of lasagna dish, followed by layer of eggplant

put ricotta layer on, more sauce, more eggplant

add feta, bacon, sauce, more eggplant

top with more sauce and grated mozarella

bake at 350 for 25min, broil 5min to make cheese brown and crispy

Hey, we've got that book too! Although I confess that I mostly bought it because it's got that great line about chocolate sauce being yummy and hot sauce being yucky. Chris thinks we should write to the editors and have them change that to "hot sauce is also yummy." We also question the line about too much ice cream being yucky... ;) Is there such a thing as too much ice cream?

Hi Guys... Mandy, Mark & Joshua Weighell here.

Were both shocked at how big and grown up Jamie is (although it has been 9 months since we left Kenilworth and you've also returned home too).

Hope all is well with you guys?

Were still loving Australia, particularly Josh - who loves the water and surf! We're also expecting our second - due in January 08. Not long now!!!
